La Fonda d’El Foment – Arrossos
Update of the kitchen at La Fonda d’El Foment with a new area dedicated to paella cooking. Completely custom-made, the cooker incorporates 6 high-performance gas burners (11.5 KW each) specially designed for paella cooking. We install these burners in a tank with water to facilitate cleaning at the end of the service. Next to these burners, we install 2 independent induction fires (5 KW each), to cook the broth with large capacity pans. We complete this area with a “passe” area with a double shelf, a 2-door refrigerated cabinet with remote motor and a large-capacity Blodgett oven to finish cooking the rice. We also install extractor hoods and the extraction system.
