BANKPALATSET
Project details
After having worked in Noma, Operakällaren, in two restaurants in Oslo and in an award-winning hotel in Skåne, the chef Simon Weinberg and his wife Henriette have opened BANKPALATSET; a carefully restored bank, right in the heart of Helsingborg (Sweden) proposing classic European flavors with a modern perspective in a cozy brasserie atmosphere. In his very rectangular kitchen we provided a 5 meter long cooker, a 7 meter long bench for the passe and an central island for the pastry section. The cooker included 1 big plancha, an integrated JOSPER robata, 2+4 inductions and 1 double-basket fryer. The bench in the passe, with special shapes to respect 2 columns, included 1 heating bench accessible from both sides, 2 refrigerated benches and 1 freezing bench in the chef’s side and neutral shelves on the waiter’s side. The central island in the pastry area included a white Silestone worktop, 1 refrigerated bench and neutral shelves on both sides.
